Nutrition Highlights:
Protein for Muscle Health: Eggs, turkey bacon, and cheese provide high-quality protein to support muscle maintenance, tissue repair, and recovery, while helping keep you satisfied throughout the morning.
Lower in Saturated Fat: Turkey bacon and reduced-fat cheddar can help reduce saturated fat compared with traditional pork bacon and full-fat cheese, while still delivering plenty of savory flavor.
Choline for Brain Health: Eggs are an excellent source of choline, an essential nutrient that supports brain function, memory, and nervous system health.
Whole Grains + Fiber for Sustained Energy: Whole wheat bagels provide complex carbohydrates to fuel your body and brain, along with fiber to support digestive health and satiety.
B Vitamins for Energy Metabolism: Whole wheat bagels and eggs provide B vitamins that help your body convert food into usable energy.
Ingredients:
5 whole wheat bagels, sliced in half (I used Dave’s Killer Bread, which significantly boosts the protein!)
8 oz (227 g) Turkey Bacon
5 slices cheddar cheese
5 whole eggs
Salt and pepper
Directions:
Preheat oven to 375
In a large baking dish, whisk together the eggs, salt, and pepper.
On a parchment-lined baking sheet, place all the turkey bacon slices in a single layer.
Place the baking dish with the egg, and baking sheet with the turkey bacon, in the preheated oven. After 15 minutes, flip the turkey bacon and cook another 15 minutes. Both the egg and turkey bacon should be done after 25-30 minutes. Remove from oven once the egg is fully cooked through and the turkey bacon is crispy.
Slice the egg into 6 equal parts and chop each bacon slice in half.
To assemble each bagel, add one portion of egg, 1 slice of cheddar cheese, and 1 slice of turkey bacon (cut in half to fit on the bagel). If making as a meal prep, do not toast the bagel or melt the cheese.
Wrap each individual bagel sandwich in tinfoil and store in the refrigerator for 1 week, or freeze up to 3 months.
Reheating instructions: I highly recommend reheating these bagels in the oven or airfyer; as both options will toast the bread nicely and prevent sogginess.
MindFuel Tips
Turkey bacon can be high in sodium. If you are limiting sodium intake due to health concerns, I recommend looking for one that is lower sodium.
Don’t have bagels? No worries! Substitute any type of whole wheat bread and you will still get a boost of fiber!
